These pancakes are beautifully light and fluffy. The protein from the eggs and protein powder make it a nutritious breakfast keeping you feeling full and satisfied. Free from dairy, refined sugar, gluten and grains. A breakfast that the whole family will love.
2 organic free range eggs
2 scoops protein powder (we used vanilla pea protein)
2 Tbs. coconut flour
1 tsp cinnamon
1/2 cup of nut milk
Enough filtered water to achieve desired consistency
Pinch of salt
Raw Organic Coconut Oil for cooking the pancakes
3 heaped Tbs. of Natural Coconut Yoghurt
Generous drizzle of nut butter
Blueberry chia jam or fruit of choice
Combine the protein powder, coconut flour, cinnamon and salt in a mixing bowl. In a separate bowl combine the eggs and nut milk and then add this to the dry ingredients. Whisk well and add water if necessary to achieve desired consistency.
Heat coconut oil in a pan and cook the pancakes waiting until bubbles appear on the surface before flipping them.
Stack the pancakes onto a plate and between each layer put a generous serve of blueberry chia jam, nut butter and natural coconut yoghurt. Top with coconut chips and cacao nibs.
Serves 1-2 people.
