Chocolate Coconut Yoghurt 'Sandwiches'

Ingredients

2 Cups of of our Lightly Toasted Organic Muesli
2 Bananas 
6 Heaped Tbs of our Cacao Bean Coconut Yoghurt

Garnish
Melted Dark Vegan Chocolate

Instructions

To begin with preheat the oven to 180 degrees celsius. Add the muesli and bananas into a food processor and blend until combined and the mixture is a malleable consistency. Take large tablespoons of the mixture, roll into balls and place on a lined baking tray. Press down with a fork and transfer to the oven for 10-15 minutes or until golden brown. 

Remove from the oven and let the cookies completely cool before filling them with our cacao bean coconut yoghurt. Drizzle over some melted dark chocolate to top it off. 

Makes 6.

Wow can’t wait to try that one. Am just out of hospital and am having to have bland foods at the moment. Looking forward to try this one very soon. Love your coconut yoghurt, haven’t tried the muesli yet, but soon and very soon.
