Spiced Roasted Pumpkin with Coconut Yoghurt Tzatziki

 

Ingredients 

1/2 pumpkin sliced
1-2 tbs extra virgin olive oil
1 tsp smoked paprika
1/2 tsp ground turmeric
1/2 tsp ground cumin
1/2 tsp ground coriander
Salt and pepper to taste

1/2 cup Natural Coconut Yoghurt
Juice of 1/2 lemon
1/4 cup of finely diced cucumber
1/2 clove crushed garlic (optional)
A handful of chopped mint

Method 

To begin with, preheat the oven to 180 degrees fan bake. Place the sliced pumpkin on a baking tray and drizzle with olive oil, all of the spices and salt and pepper. Cook for 30-40 minutes. Meanwhile to make the coconut yoghurt tzatziki combine all of the ingredients in a small bowl and mix to combine. Once the pumpkin has cooked, allow to slightly cool and drizzle over the coconut yoghurt tzatziki before serving.
