Three Ingredient Banana Pancakes


2 Organic free range eggs
1 Large banana 
3 Tbs coconut flour
1 tsp cinnamon (optional)
1 tsp baking powder (optional)

Raw Organic Coconut Oil for cooking the pancakes

To serve

3 heaped Tbs. of Mango, Passionfruit and Chia Coconut Yoghurt
Generous drizzle of maple syrup
Nut butter
Coconut chips


Add the banana and eggs to a blender or food processor and blend until smooth. In a separate bowl combine the coconut flour, baking powder and cinnamon. Add the banana, egg mixture and stir until a pancake batter forms.

Heat coconut oil in a pan and cook the pancakes on a low heat waiting until bubbles appear on the surface before flipping them.

Stack the pancakes onto a plate and between each layer put a generous serve of our mango, passionfruit and chia coconut yoghurt, maple syrup, nut butter and fresh passionfruit. Top with some toasted coconut chips. 

Serves 1-2 people.
