Vegan Sticky Rice with Coconut Yoghurt and Fruit



1 cup black or white rice (soaked overnight 6-8 hours or more)
2 tsp ground cinnamon
1 tsp ground ginger
1/4 tsp ground cardamon
1 cup filtered water
1 cup coconut milk/cream
A small handful of dates (chopped)

To serve

4 heaped Tbs of Mango, Passionfruit and Chia Coconut Yoghurt
Fruit of your choice (we used mango and kiwifruit)


Drain and rinse the rice and then add to a medium sized saucepan with the remaining ingredients.  Cook on a medium heat until all the liquid has been absorbed (approximately 20 minutes). The rice should be slightly chewy and a sticky consistency.

Transfer into bowls and top with coconut yoghurt, fruit and coconut chips.

Serves 3-4 people.
