Warming Carrot Cake Porridge


1 cup rolled oats
2 tbs chia seeds
1 cup of coconut cream or milk
1 cup water
2 carrots grated
2-3 tbs almond butter
1-2 tbs of raw honey or sweetener of choice
A handful of currants or raisins (optional)
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp mixed spice

To serve

1/4 cup chopped walnuts
1/4 toasted coconut chips or desiccated coconut
4 tbs of our natural coconut yoghurt

Recipe serves 3-4.


To begin, add the oats, chia seeds, coconut milk, water, spices, raisins (if using) and grated carrot into a medium saucepan and cook for 5-10 minutes until the oats are cooked. Stir in the almond butter and sweetener (you may need a little more coconut milk at this point). Serve into 3-4 bowls and top with our Natural Coconut Yoghurt, coconut chips and crushed walnuts.

Hi, I’ve recently become intolerant to gluten and exploring recipes. This sounds delicious but what would you recommend to substitute to oats with? Thanks donna
